Method
Cut the Potato, Green onion, tomato and gundruk in small pieces( if they are big)
Heat the pan add oil in it
When oil is hot put the soya bean in and let it fry
When the soya bean starts to break take it out( try to keep the excess oil in the pan because the other things are going to be cooked in the same oil
Add the masaura and let it fry too.( keep medium heat)
When the masaura turns golden brown take it out
Add gundruk into the oil take it out( gundruk is fried for short period because it gets burnt easily – popular proverb “gundruk cannot be cooked”)
Add Fenugreek seed, thyme seed and whole red chili in it
Put the potato, and add turmeric and salt in it and let it fry
When the potato looks golden brown add gundruk Soya bean and masaura to it each at a time
Add cumin powder, coriander powder and red chili powder to it
Add a glass of water ( usually in Nepal we add the water from washing rice called chaulani - चौलानी )
Put on the lid and let it boil for some time.
Gundruk has to have soup so if you see the water is evaporated then add more water.
Gundruk masaura and bhatmas is ready to serve.
